The ambiance of this little beach bar was over the top, with twinkling lights over head in the palapas, fire torches, sand in my toes, and the sounds of the waves lapping nearby

This cute couple is from Arizona, but living in Dominica attending Ross Medical School, considered the best in the Caribbean. I made my dinner selections based on their recommendation.

I started out with "Tostones," or mashed plantains deep fried with garlic and chili aioli, and a frothy frozen lime rum punch (which didn't last long!)

Entree was cashew crusted chicken over jasmine rice with a pineapple reduction -- DIVINE!

Prim stops to collect some lemongrass for me to make tea later. He tells me it is also a good insect repellent.
